Do you reheat and eat these six foods from the previous night the next day? You could be wreaking havoc on your stomach!
Dietitians say the answer depends on the specific food being reheated. In our daily lives, we consume many foods that can become significantly more harmful when reheated.
1. Rice
Cooked rice may contain spores of bacteria such as *Bacillus cereus*. If rice is left at room temperature for an extended period after cooking, these bacteria multiply and produce toxins that are not completely destroyed even by reheating.
2. Spinach and most other leafy greens
The natural nitrates found in leafy greens can become harmful due to refrigeration and repeated reheating. Leaving cooked greens at room temperature for an extended period promotes bacterial growth. Therefore, if you have leftovers, cool them quickly after cooking and store them in the refrigerator; later, take out the remaining portion and reheat it thoroughly before eating.
3. Potatoes
Potatoes are a staple in most Bengali dishes. It is not that potatoes become toxic simply by being reheated; however, if cooked potatoes are left at room temperature for an extended period, certain bacteria—such as *Clostridium botulinum*—can develop. This is particularly important for foil-wrapped baked potato dishes, which should not be left out for long.
4. Chicken
Cooked chicken can certainly be reheated, but proper storage is the most important factor. *Salmonella* or other harmful bacteria can multiply in chicken left at room temperature for an extended period. It is best to avoid repeatedly reheating refrigerated chicken.
5. Eggs
It is important to store egg-based dishes—such as rich egg curries, omelets, or egg fried rice—properly. Instead of reheating the entire dish repeatedly, take out and heat only the portion you need.
6. Mushrooms
Do not leave mushroom dishes sitting out for a long time after cooking, as harmful bacteria can breed in them. However, if the food is cooled and refrigerated promptly—and stored correctly at the right temperature—there should be no harm in reheating and eating it later.
