Thoufeek does not label Muttamala as a Portuguese recipe, yet its origins trace back to the broader family of egg-based confections that were popular in the Portuguese imperial era. Known in Portugal as ‘fios de ovos,’ these treats were created in convents where surplus egg whites were utilized for other purposes, leaving the yolks to be transformed into sweet delicacies. Similar to the famed pastel de nata, Muttamala embodies the fusion of cultures that defines Kochi’s culinary landscape.
